Since they don't even have the ingredients you're used to when it comes to the recipe for Raffaello, I didn't think I'd call them that. Idaca still exceeded expectations, I allow my name without remorse. The difference is that my candies do not taste synthetic at all and because I ground the almonds instead of putting them whole inside, they are not crispy. And there's another difference… they're better.

  • four tablespoons of coconut grater (65 g) + one more for decoration (15 g)
  • 140 g coconut cream (be careful not to contain too much nonsense, I found one with 99% coconut, water and a milk protein)
  • two tablespoons of cashew butter (55 g) - this time I do not recommend butter from other oilseeds, its aroma blends perfectly in the perfect combination that I just share with you
  • a tablespoon of almond flour (30 g) - or raw peeled ground almonds
  • 10 drops of stevia extract (natural sweetener)

RECIPE PREPARATION Raffaello candies:

Mix the coconut milk (cream) with the sweetener, pour over the 4 tablespoons of coconut and mix. Add the two tablespoons of cashew butter, mixing well again. Then add the almond flour (I preferred not to put the whole almonds to subtly spread their taste throughout the composition) and mix again to be a homogeneous composition. Refrigerate for 20 minutes then we are ready to make the candies that we finally give through the preserved coconut grater.
